Since it is just me, i cut the recipe in 1/2 and sometimes it will last a couple of days for breakfast. I followed this recipe as written, with one exception, and that was replacing the swiss chard with fresh spinach. Have made the 'original' recipe for years (didn't dawn on me at first that this was a tweaked version:)) and it's pretty damned good. And sometimes i've eaten it for breakfast, lunch and dinner! Like usual with banana bread i used oil instead of butter (so a cpl of tbsps less) and if bananas ripe enough, cut back a bit on the sugar.
Different from the texture of my creamed spinach, this braised cabbage, or collard greens, these are a must try.
